FARRO SALAD & APPLE ๐ŸŽ SPICE SHRUB
Sweet potatoes, ๐ŸŽ's & greens fill out this hearty farro salad. With sweet, salty, crunchy & nutty elements, it's a perfect fall side or meal on its own.ย This hearty farro salad ๐Ÿฅ— makes a wonderful holiday side or light dinner ๐Ÿฅ˜. If you're gluten-free, use quinoa in place of the farro.

"Originally from Ancient Mesopotamia, farro is a term used to describe any one of three ancient wheat grains: einkorn, emmer, or spelt. However, in the United States and Europe, the term farro generally refers to emmer wheat."ย

For the Vinaigrette:

  • 2 TBS Apple ๐ŸŽ Spice Shrub from Urban Farmhouse Co.ย 
  • 2 TBS EVOO
  • 1 tsp Dijon mustard
  • ยฝ tsp raw honey or maple syrupย 
  • 1 big squeeze of orange (optional)
  • Sea salt and fresh black pepperย 

Whisk together the dressing ingredients.

For the salad:

  • 1 C. cooked farro
  • 1 sweet potato, cubed
  • A few leaves kale, chopped
  • 2-3 C. salad greens
  • 1-2 carrots, peeled into ribbons
  • 1 ๐ŸŽ, diced
  • A few radishes, sliced thin
  • Small handful of chopped parsley
  • ยฝ cup chopped & toasted almonds

1. Preheat the oven to 400 degrees. Toss the sweet potato cubes with olive oil, salt, and pepper. Roast until golden brown, about 35 minutes.

2. In a large bowl, lightly massage the kale with a bit of the dressing until the kale wilts down. Add the farro and mix.

3. Add the greens, ๐Ÿฅ•'s, apple, radishes, parsley, and almonds, and toss with as much dressing as you like. Taste, adding salt and pepper as needed.
