🎅❤️HOLIDAY PHYLLO BITES 🎅❤️
These bright HOLIDAY CELEBRATION tidbits are loaded with fresh cranberries, crushed pineapple, diced celery, chopped walnuts, and refreshing Cranberry Shrub! This is the perfect holiday appetizer or dessert for winter festivities! ❄️
Serves: 8
1 pkg. phyllo shells
1 pkg. cream cheese
2 TBS Urban Farmhouse's Cranberry Rosemary Shrub
1 (3 oz.) pkg. cherry Jell-O gelatin
1 (1 lb.) bag fresh cranberries
1 C. granulated sugar
1 C. water
1 (15 oz.) can of crushed pineapple drained
1 C. celery, diced
1/2 C. chopped walnuts
Fresh rosemary for garnish
Instructions:
1. In a saucepan, bring cranberries, sugar, and water to a boil over medium-high heat until the berries begin to pop and syrup begins to form. Remove from heat and allow to cool.
2. In a separate saucepan, over low heat, whisk together 1 C. of the cranberry syrup with cherry Jell-O until dissolved. Remove from heat and cool slightly.
3. Stir the cooled cranberries with the remaining syrup into the cooled Jell-O mixture. Add crushed pineapple, Cranberry Rosemary Shrub, chopped celery, and walnuts.
4. Pour into a serving bowl, cover, and chill for 4 hours or overnight. Stir just before serving.
5. Cut small circles of Phyllo and place rounds in mini cupcake tin to maintain cup shape. Bake according to package instructions.
6. Allow Phyllo cups to cool and then add a dollop of cream cheese and then a spoonful of Holiday celebration filling.
7. Garnish with walnuts and rosemary and enjoy!
